Potatoes & Peppers

Serves 8

1 lb unpeeled potatoes, cut in thick vertical slices
1/2 Ib green bell peppers, cut in wide vertical strips
1/2 1b red bell peppers, cut in wide vertical strips
1 large onion, cut in thick vertical slices
1 clove garlic, crushed
1 T olive oil
1 T chopped parsley

Place potatoes, peppers, onion, and garlic in a shallow roasting pan. Drizzle with oil, sprinkle with parsley, and toss to mix well. Bake uncovered, turning vegetables occasionally, until potatoes are tender, about 30 to 35 minutes.

Suggestion:

  • Add oregano, rosemary, or other seasonings to vary the flavor.
