Onion Quiche

Serves 6

1 T cornstarch
1/4 C skim milk
1 C plain nonfat yogurt
3/4 C egg substitute
1/4 tsp black pepper
Pinch of nutmeg
1/2 C finely shredded onion
1 C shredded low-fat mozzarella cheese
Basic Pie Crust for 9-inch pie

Dissolve the cornstarch in the milk. Mix with yogurt, egg substitute, pepper, and nutmeg, blending well. Spread onion and cheese in the bottom of a quiche pan lined with Basic Pie Crust. Pour liquid over the onions and cheese. Bake at 375° for 30 to 35 minutes, or until nicely browned and the custard is set (a knife tip inserted in the center of the quiche should come out clean). Cool for 10 minutes before cutting and serving.

Suggestion:

  • Use spinach leaves, steamed broccoli florets, or other vegetables in addition to or in place of the onions.
