Red Potato Salad
Serves 6
1/2 C plain nonfat yogurt
3 T reduced-fat mayonnaise
1 tsp dried tarragon
1 T tarragon vinegar
1 tsp mustard
4 small stalks celery, thinly sliced
2 hard-boiled egg whites, chopped
1 lb red potatoes, boiled, and cubed
Mix all ingredients except potatoes. Pour dressing over the potatoes and mix until they are evenly coated. Serve warm or cold.
