Jicama Salad
Serves 8
3 C peeled and shredded jicama
2 C shredded red cabbage
1 small red onion, finely chopped
4 carrots, grated
1 medium bell pepper, finely chopped
1 T olive oil
1 tsp lime or lemon juice
1 tsp white vinegar
1 tsp water
1 tsp celery seeds
1/2 tsp sugar
Toss jicama, cabbage, onion, carrots, and bell pepper together. Shake remaining ingredients together in a tightly covered container until well blended.
Pour over salad and toss lightly.
