Red & Green Cole Slaw
Serves 6
1/2 C water
2 T sugar
2 tsp safflower oil
1/2 C shredded red cabbage
1-1/2 C shredded green cabbage
1 medium carrot, julienned
1 small red bell pepper, julienned
1/2 C chopped scallions
3 T minced fresh parsley
1/2 C white wine vinegar
1/2 tsp freshly ground pepper
Bring water, sugar, and oil to a boil, stirring well. Pour over cabbage and toss well. Add remaining ingredients, tossing gently to combine. Cover and chill thoroughly before serving.
