Peach “Consommé” with Summer Berries & Fruit*
Serves 6
5 C water
1 C dry white wine
1-1/2 C sugar
3 C ripe peaches, peeled and minced
2 cloves
1 bay leaf
1 tsp crushed cardamom seeds
6 peppercorns
1/4 tsp lemon zest
1/4 tsp orange zest
1/2 vanilla bean, split and scraped
2 C favorite mixed berries (at least 3 types)
2 peaches, thinly sliced into 18 pieces
3 Black Mission figs, quartered
1 star fruit, thinly sliced in 18 pieces
6 oz fruit or lemon sorbet
6 fresh mint sprigs
In a medium nonreactive stockpot, bring water, wine, and sugar to a simmer and cook for 3 minutes. Add peaches, cloves, bay leaf, cardamom, peppercorns, lemon and orange zest, and vanilla bean and simmer for 5 minutes. Cover and let stand overnight at room temperature. Strain through a cheesecloth and chill.
Combine the berries, peaches, figs, and star fruit. Divide among 6 chilled soup bowls. Ladle Peach Consommé into bowls. Place a scoop of sorbet in the center of each bowl and garnish with mint sprigs. Serve immediately.
Suggestion:
- Peach Consommé can be stored in the refrigerator for 3 days.
