Hoppin’ Charlie’s Black-Eyed Soup
Serves 8
1 lb fresh black-eyed peas
1 medium onion, minced
1/2 clove garlic, minced
2 C canned stewed tomatoes
2 C white rice, cooked
1/4 C chopped parsley
1/4 C chopped scallions, green tops only
Bring peas, onion, garlic, and 1 qt of water to a boil. Reduce heat and simmer until beans are tender. Add remaining ingredients, stirring well. Simmer just until thoroughly heated.
Suggestions:
- Be sure to use fresh, not dried, black-eyed peas in this recipe.
- Serve with cornbread and greens.
