Black Beans*
Serves 16 (1/2 C each)
1 Ib dried black beans, rinsed; stones removed
1 onion, diced
1 bunch cilantro, cleaned and chopped
1 C chopped tomatoes
2 cloves garlic, diced
1/4 tsp salt
1 jalapeño pepper, diced (optional)
Cook beans, in water to cover, until soft. Add remaining ingredients and cook an additional 30 minutes. Serve with Snapper Soft Tacos with Two Salsas.
Suggestion:
- Do not add salt to beans during cooking or they may become tough.
