Angel Hair Pasta with Basil
Serves 6
2 T finely chopped garlic
2 T finely chopped shallots
2 T chopped fresh basil
1/3 C plum tomatoes, peeled, seeded, and diced
1 lb angel hair pasta, cooked al dente and drained
Freshly ground black pepper to taste
4 sprigs fresh basil
1/3 C freshly grated Parmesan cheese
Sauté garlic, shallots, basil, and tomatoes for 2 to 3 minutes, or until the tomatoes are tender. Toss the tomatoes with the hot pasta and black pepper. Garnish with fresh basil sprigs. Serve with Parmesan cheese on the side.
