French Toast*
Serves 6
1 egg
4 egg whites
1/4 C skim milk
1/2 tsp almond extract
2 T brown sugar
1/4 tsp cinnamon
6 slices whole-wheat bread
Beat egg and egg whites well. Mix in milk, extract, sugar, and cinnamon. Dip each slice of bread in egg batter. Cook in a preheated nonstick skillet over medium-high heat for 2 to 3 minutes on each side, or until golden brown. Serve warm.
Suggestions:
- Serve with Honey-Ginger Applesauce, Cherries Sauce, Melba Sauce, Ginger Pears, Orange Dressing, or fresh fruit with a light dusting of powdered sugar.
- Use Cinnamon Swirl Bread or Brandied Raisin Bread instead of whole-wheat bread.
- Vanilla or other extracts can be substituted for the almond extract.
