Raisin Bran Muffins
Serves 12
1/4 C raisins
2-1/4 C oat bran
2 tsp baking powder
2 tsp nonfat dry milk
1 C plain nonfat yogurt
1 C unsweetened applesauce
1/4 C molasses
1/4 C brown sugar
2 egg whites
Pour hot water to cover over raisins and set aside. Mix dry ingredients together; set aside. Drain raisins and mix with remaining ingredients. Add to dry ingredients and stir until just mixed. Spoon batter into 12 nonstick muffin cups. Bake at 400° for 20 to 25 minutes.
