Yogurt Cheese
32 oz plain nonfat yogurt
Place a large piece of cheesecloth or a yogurt cheese funnel in a large bowl.
Pour in the yogurt. If cheesecloth is used, tie the corners of the cloth together.
Hang the “bag” of yogurt so the liquid can drain into the bowl; the bag must be suspended so that it is not sitting in a puddle at the bottom of the bowl. If a yogurt cheese funnel is used, follow the manufacturer’s directions.
For a soft texture, let the yogurt drain for 1 day; use in place of sour or whipped cream. For a thicker texture, let the yogurt drain for 2 days. Use in place of soft cream cheese.
Store in the refrigerator in an airtight container for up to 1 week. Makes 2 C.

- Use vanilla nonfat yogurt to make a cream cheese substitute to use in cheesecake and other sweet recipes.
