Buttermilk Cucumber Dressing

2/3 C buttermilk
3 T grated cucumber
2 tsp Dijon mustard
1 small scallion, sliced
1 T chopped parsley
Freshly ground black pepper to taste

Mix all ingredients. Refrigerate overnight to allow flavors to blend. Makes 1 C.
