Almost Guacamole
Serving size: 2 T
1 pkg (10 oz) frozen early or baby peas
1/2 C plain nonfat yogurt
1 green chili, seeded and minced
1 T chopped fresh parsley
1 tsp lemon juice
1/2 tsp ground cumin
1/4 tsp salt
Dash of hot sauce
2 T diced red onion
1 C peeled, seeded, and chopped tomato
Cook peas according to package directions, omitting salt. Drain well. Purée peas, yogurt, chili, parsley, juice, cumin, salt, and hot sauce in a food processor or blender until smooth. Stir in onion and tomato. Cover and chill thoroughly.
Makes 2 C.
