Dessert Pie Crust
Serves 8
3 egg whites, room temperature
3/4 C sugar
1 tsp vanilla extract
1/2 tsp almond extract
16 low-fat, whole-wheat crackers, finely ground
1/2 tsp baking soda
2 T chopped walnuts
Beat egg whites with an electric mixer until frothy. Gradually add sugar, continuing to beat until stiff peaks form. Fold in remaining ingredients. Spoon into a pie pan lightly coated with vegetable spray, spreading gently to cover bottom and sides. Bake at 325° for 45 minutes. Cool before filling.
