Say Cheesecake
Serves 10
1 C low-fat (1%) cottage cheese
1 C plain nonfat yogurt
8 oz nonfat cream cheese
1/2 C sugar
2 tsp grated lemon rind
2 tsp vanilla
2 egg whites
Graham Cracker Crust in 8-inch tart pan
Blend cottage cheese in a food processor or blender until completely smooth, about 2 minutes. Add yogurt, cream cheese, sugar, lemon peel, vanilla, and egg whites, processing until creamy. Pour into prepared crust. Bake at 350° for 30 minutes. Turn oven off and open the door slightly; leave the cheesecake in the oven for 30 minutes. Refrigerate several hours or overnight before serving.
Suggestions:
- Top with Ginger Pears, Cherries Sauce, or Blueberry Topping.
- Decorate with fresh strawberries, thinly sliced kiwis, raspberries, or other fresh fruit.
