Cocoa Cake
Serves 12
1 C sifted all-purpose flour
1/2 C whole-wheat flour
3 T cocoa powder
1 tsp baking soda
1 C sugar
1/2 tsp salt
5 T canola oil
1 T vinegar
1 tsp vanilla
1 C cold water
Combine flour, cocoa, baking soda, sugar and salt. Add remaining ingredients and beat with a spoon until smooth. Pour batter into a nonstick 8- or 9-inch square cake pan. Bake at 350° for 35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
Suggestions:
- Decorate the cake with a light dusting of sifted confectioners’ sugar.
- Serve with Melba Sauce or Cherries Sauce.
