Four Turkey Sausages
1-1/2 1b ground turkey breast, uncooked
1 egg white
Thoroughly combine turkey, egg white, and seasonings for your choice of sausage (see variations). To test and adjust the seasonings, cook a teaspoon of sausage and taste it; increase the seasonings or add other seasonings to suit your preference (chili peppers, poultry seasoning, Tabasco). Shape the properly seasoned turkey into 12 patties and chill for 1 hour or freeze. Brown sausages in a nonstick skillet over medium-high heat for 5 minutes on each side.
Seasonings for 4 Variations
Traditional Sausage:
1/4 tsp sage
1/4 tsp marjoram
1/4 tsp thyme
1/8 tsp summer savory
1/4 tsp freshly ground black pepper
Apple Sausage:
1/4 C grated Granny Smith apple
1 tsp reduced-calorie maple syrup
1/4 tsp freshly ground black pepper
Garlic Sausage:
1 clove garlic, thoroughly mashed
1/4 tsp sage
1/4 tsp freshly ground black pepper
Pinch dry mustard
Herb Sausage:
1/2 tsp crumbled rosemary
1/4 tsp minced parsley
1/4 tsp freshly ground black pepper
