Grilled Tuna Sauce Vierge*
Serves 8
2 T olive oil
15 twists freshly ground white pepper
1/4 C basil trimmings
3 garlic cloves, crushed
8 tuna steaks (6 oz each), skins removed
Sauce Vierge
Mix olive oil, pepper, basil, and garlic. Pour over tuna and marinate for 2 hours or more. Grill the tuna steaks for 2 to 3 minutes on each side, or until firm to the touch. Warm the Sauce Vierge; spoon equal amounts on 8 dinner plates. Top with fish.
Suggestions:
- Garnish with a sprig of basil and straw potatoes.
- If the budget allows, a julienne of first-quality truffles is a wonderful enhancement.
